Smoked Ginger Lemonade
Lemonade is perfect for summer picnics and barbecues. Make a pitcher of this smoked ginger lemonade for your next outdoor dinner. Your friends and family will thank you!
- 2 cups fresh lemon juice (about 8 lemons, halved)
- 1 1/2 cups sugar, divided
- 8 cups water (2 quarts)
- 1 Tablespoon ginger root, minced
Preheat pellet grill to high smoke.
Dip the lemon halves, cut side down in a 1/2 cup of sugar. Place lemons on the bottom grate of the pellet grill and smoke, cut side up, until they are soft and browning a little bit, about 25 to 30 minutes. Place a small piece of ginger root on the rack to smoke with the lemons.
Make a simple syrup by stirring 1 cup of sugar in 1 cup of hot water in a small pan. Heat on stove top until sugar is melted, then set aside to cool.
Remove lemons and ginger from grill. Squeeze the lemons into a pitcher, using a sieve to catch all the seeds and pulp. Finely mince the ginger and blend with lemon juice and simple syrup. Add the rest of the water and some ice.
