Cinnamon Peach Kuchen

12" Seasoned Cast Iron Skillet
Ingredients
- 2 cups all purpose flour
- 2 Tablespoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup cold butter
- 3 - 15 ounce canned peach halves, drained and patted dry
- 1 cup brown sugar
- 1 teaspoon ground cinnamon
- 4 egg yolks
- 2 cups heavy cream
Instructions
Heat oven to 350 degrees F. In a small bowl, combine flour, sugar, salt and baking powder, cut in butter until crumbly. Press into bottom and 1 inch up the sides of a greased 12" cast iron skillet. Place peach halves, cut side up, in the crust. Combine brown sugar and cinnamon. Sprinkle over peaches. Bake for 20 minutes.
Combine egg yolks and cream, pour over peaches. Bake for 25 to 30 minutes longer or until the top is set. Cool on a wire rack.
Note: When baking your kuchen, the filling will still be jiggly when removing it from the oven. It will continue to set as it cools, so be sure to let it cool completely before cutting.
Note: To make kuchen in 10" skillet, use 2 cans peach halves and mix 2 egg yolks with 1 cup of cream. The crust measurements stay the same, the crust is just a bit thicker.
