Chicken Street Tacos
Chicken thighs grilled to perfection and served with warmed corn tortillas, onions, and cilantro. You will love how easy it is to make these delicious chicken street tacos!
- Boneless, skinless chicken thighs - 3 lbs
- 14.5 oz can of diced fire roasted tomatoes - 2
- White onion, diced - 1
- Cumin seed, toasted - 2 teaspoons
- Salt and pepper, to taste
Salt and pepper chicken thighs. Grill on medium heat until internal temperature reaches 165 degrees F.
Toast cumin seed in cast iron pan on medium to high heat. Add and saute onions. Once onions have started to turn transparent, add tomatoes and grilled chicken, reduce liquid and serve with onion and cilantro on a warmed corn tortilla.
