Candied Bacon Chocolate Chip Cookies
If you're a fan of salty and sweet, you are in for a serious treat! Soft chocolate chip cookies with candied smoky bacon mixed in for a delicious balance of the flavors you crave!
- For the Cookies:
- 1 1/3 cups shortening
- 1 cup brown sugar
- 1 cup white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups semi-sweet chocolate chips
- *6 slices candied bacon, cut into bits
- *For the Candied Bacon:
- 1/4 cup brown sugar
- 2 Tablespoons maple syrup
- 12 pieces of thick cut bacon
Preheat pellet grill to 375 degrees F.
Cream together shortening, brown sugar and white sugar.
Add eggs, vanilla, flour, salt, baking soda, chocolate chips and candied bacon. Mix together until well combined.
Drop by rounded teaspoons on a non-greased cookie sheet. Bake at 375 degrees F for about 10-12 minutes until edges just begin to brown.
*Instructions for candied bacon:
Preheat pellet grill to 350 degrees F.
Mix brown sugar and maple syrup until incorporated. Rub mixture on both sides of bacon. Cook the bacon on a pan or directly on the grill grates for 20-25 minutes, watching closely towards the end.
