Bacon Wrapped Chicken Bites
Another recipe transformed from meh to marvelous thanks to the delicious power of bacon. Grab some chicken breast and some bacon, and you could be enjoying this for dinner tonight. Try it at the campsite, at the tailgate party, on the back patio...wherever you most like to chow down on incredible food.
- 4 boneless, skinless chicken breasts
- 1 pound bacon, thick-cut
- 1 cup favorite BBQ sauce or marinade
- 32 toothpicks
Cut all of your bacon strips in half so there are 32 pieces. Thick-cut bacon works best.
Next, trim the boneless, skinless chicken breasts. Cube each breast into 8 chunks, so you have 32 chicken pieces.
Wrap one piece of bacon around one piece of chicken and secure with a toothpick.
Preheat your cast iron skillet or a Dutch oven lid with a little bit of oil or cooking spray. When the pan starts to smoke a little, place the bacon wrapped chicken in to fry. Fry for 10-15 minutes, turning each piece every couple of minutes to brown all sides.
Preheat the Dutch oven to about 350° F for baking. Once the bacon is browned and slightly crisp, transfer the bites into the oven. Add BBQ sauce, teriyaki sauce, or your favorite marinade, then cover with a lid. Bake for 15-20 minutes until the chicken is cooked through.
Serve warm and enjoy!
