Homemade Tortilla Chips
After you try cooking tortilla chips in a cast iron skillet, you'll never want store-bought chips again. Try cooking these alongside our favorite queso dip!
Dry out your tortillas by letting them sit out overnight or baking them at 350° for 5 minutes.
Cut each tortilla into six triangle pieces like a pie.
Fill your cast iron skillet with about 1 cup of oil, or so the oil is close to 1/4 inch deep in the pan. Heat the oil over medium heat to 350° F, or until a tortilla piece sizzles when dipped. You don't want to heat the oil to smoking.
Place one batch of tortilla pieces into the hot oil in a single layer. Use tongs to turn and adjust the pieces so every side is covered. Cook until crispy and slightly browned, about 2 minutes.
Prepare a plate with a paper towel. As the chips finish cooking, place them on the paper towel plate. You can place paper towels between each layer of finished chips to help the excess oil drain.
Sprinkle with salt, pour into a bowl, and enjoy with some homemade queso dip!
