Herb Roasted Potatoes
Amazing roasted yellow potatoes that are full of flavor and bake up golden brown and crisp. A quick and easy recipe for the holidays or any meal of the day!
- 4 lbs of yellow potatoes, cubed into bite-sized pieces
- 2 Tablespoons fresh sage, chopped
- 2 Tablespoons fresh rosemary, chopped
- 2 Tablespoons fresh thyme, chopped
- 6 cloves garlic, minced
- 3 Tablespoons olive oil
- Salt and pepper to taste
Preheat pellet grill to 375 degrees F.
Cube potatoes and mix with herbs, garlic and oil. Spread thin layer of potatoes in a cast iron skillet and roast until soft, golden brown and crispy. About and hour. A half hour into cooking time give the potatoes a stir.
