Ingredients

2 ounces bourbon

 2-3 dashes bitters (orange) 

1 teaspoon smoked thyme simple syrup 

Orange peel

1 bunch or fresh thyme

⅔ cup maple syrup

 ⅓ cup water

Ice chunk and or garnish, such as a maraschino cherry or luxardo cherry

Instructions

Thyme Smoked Simple Syrup

Step 1

Start off by taking a bunch of thyme, 5-6 stems, and tying them together...try butchers twine.

Step 2

Smoke the thyme for about an hour at 225°F.

Step 3

After an hour remove the thyme and add it to a small 1 qt saucepan. Add in the ⅓ cup of water, and ⅔ cup maple syrup, set it on the Sidekick with a low simmer for about 5 minutes to make sure the maple mixes with the water and the thyme essence flavors all.

Step 4

Remove and cool it. Store it in a mason jar with the thyme.

Smoked Old Fashioned

Step 1

To make the drink start by using a peeler to take a decent peel swipe off of an orange, about ½ inch wide or more up to two inches long.

Step 2

Swipe it around the rim of the glass and set aside.

Step 3

Inside a rocks glass add the bourbon, the dashes of bitters, and the thyme simple syrup, mix it with a spoon.

Step 4

Add a nice ice cube, a silicone ice cube tray is designed to make larger cubes for an old fashioned but you can use 3-4 regular cubes.

Step 5

Swirl it a bit so the ice melts and adds some water and the bourbon blooms.

Step 6

Add the orange peel that was set aside and a cherry if you so desire.
