Oh the wonder of homemade pancakes. Few things taste better and fill the belly like homemade pancakes. This tasty recipe is one of those few things that has a wonderful flavor and fills the belly like few things can.
  • ½ C. Whole Wheat Flour
  • ½ C. Quick cooking oats
  • 1 T. Sugar
  • 1 t. baking powder
  • ½ t. Cinnamon
  • ½ t. Salt
  • 1 Egg
  • 2/3 C. Milk
  • ½ C. Applesauce
  • 2 T.  Oil
  • ½ C. chopped walnuts

Combine dry ingredients in medium size bowl. (IMG_4773)
Beat egg in small bowl, add rest of wet ingredients (IMG_4774)
Add the liquid mixture to the dry mixture, stirring just until blended
Fold in walnuts
Turn the burners on medium high to pre-heat the griddle (about 10 mins). We used a brand new CGG24B and placed it on the front and back burners of our kitchen gas stove. (CGG24B_2)&(CGG24B_1)
Turn the burners down a bit to cook the pancakes. We burned ours a bit because the griddle was too hot to start with and I found that these pancakes take a bit longer to cook because of the flour and oats.
Lightly grease the griddle and use ¼ c. to scoop out the batter and place on the griddle.
Cook until the outside edges begin to look dry and there are some bubbles in the batter.
Turn over and brown other side. You may want to turn them over once more to ensure the center gets cooked all the way through.
These are very tasty and hearty pancakes. They were great alone with syrup or with a berry compote. (Click here for the recipe.)
