1 package frozen puff pastry, thawed
1/2-1 cup of your favorite jam
1 round (16 ounces) Brie cheese
1 large egg
1 Tablespoon water
2 chocolate chips, raisins or dried cranberries
Preheat pellet grill to 400°F.
Unfold one sheet of puff pastry. Roll pastry into a square. Use a rolling pin to spread dough out. Cut off the corners to make a circle. Spread jam into a circle about the same size as the brie in the center of the pastry. Place Brie on top and fold pastry over cheese. Pinch the edges to seal. Beat egg and water and brush over pastry.
Place on cast iron pizza pan, seam side down. Roll the remaining pastry out into a square. Use a rolling pin to spread dough out. Cut into 1 inch strips. Wrap strips around the Brie, just on top and down the sides, trimming as needed. Discard scraps.
Place on the top rack of pellet grill and bake 10 minutes and then brush again with egg wash. Finish baking until golden brown, about 10-15 minutes more.
For the eyes, cut two circles from apple slices. Place on top of Brie. Top each apple slice with chocolate chip. Serve with crackers or apple slices.
