Smoked Simple Syrup
Preheat your pellet grill to 180ºF.
Add 1 cup water to 1 cup sugar. Give it a quick stir to begin the dissolving process. Pour into your skillet.
Place on the bottom rack for 2 hours.
With heat guard gloves or oven mitts, remove from the pellet grill and cool completely. Bottle in an airtight container such as a mason jar and store in the refrigerator for up to a month.
In a flat bottomed glass or mason jar, add the blackberries, mint, and Smoked Simple Syrup.
Muddle them into a purple-y good mass.
Add the muddle mass into a champagne flute.
Top with Prosecco.
Garnish with lemon slices, blackberries on the rim, or a mint sprig.
