This southern cornbread is the perfect savory cornbread baked in a hot cast iron skillet. Fluffy and soft, it's the only recipe you'll need!
- White cornmeal, stone ground - 3 cups
- Baking powder - 2 teaspoons
- Baking soda - 1/2 teaspoon
- Kosher salt - 1 teaspoon
- Eggs - 3
- Buttermilk - 2 1/2 cups
- Bacon fat or butter, melted - 2 Tablepoons
- Butter - 6 Tablespoons
Preheat pellet grill to 400°F.
Mix dry ingredients together, add eggs and buttermilk. Stir until just incorporated and then add melted butter or bacon fat, whichever one you prefer. Melt 6 T. butter, in a 12” cast iron skillet on the stove or in the pre-heated Pellet grill, until sizzling.
Pour the cornbread batter into skillet and cook in pellet grill for about 15-20 minutes or until the sides pull away and brown.
