Salmon Tacos with Mango Salsa
Spicy chipotle grilled salmon, wrapped in a warmed corn tortilla with sweet and spicy mango salsa. Whether you want to make these for friends on Cinco De Mayo, or your family, it's an awesome combo on any day of the week!
- For the Salmon:
- 1 salmon fillet
- Camp Chef's Mango Chipotle Rub
- For the Mango Salsa:
- 1 pound grape tomatoes, halved
- 1 mango, chopped
- 2-3 tomatillos, chopped
- 1/2 white onion, chopped
- 1 or more Serrano or jalapeño pepper, depending on the amount of heat you like, chopped
- Salt to taste
For the mango salsa:
In a medium bowl, combine all ingredients. Set aside.
For the salmon:
Preheat grill to medium heat.
Liberally cover salmon with Camp Chef's Mango Chipotle Rub. Grill salmon 7 minutes per side.
Flake salmon into chunks and serve with warm corn tortillas and mango salsa.
