Chicken Lollipops with Mountain Sauce
Smoked chicken lollipops with a hot, spicy and sweet sauce. Perfect for summer BBQs!
- 3-4 pounds chicken drumsticks
- 1 cup Frank's Hot Sauce
- 1 cup honey
- 1 cup brown Sugar
- 1/4 cup simple berry syrup
- 1 teaspoon fresh ginger
For the sauce:
Bring hot sauce, honey, brown sugar, ginger and berry syrup to boil simmer for 30 minutes until sauce is a syrup consistency.
For the chicken lollipops:
Cut the skin and tendons from chicken drumsticks to expose the bone.
Cover chicken with peanut oil and salt and pepper. Smoke on high smoke setting until internal temp is 145 degrees. Cover legs in mountain berry sauce and sear on medium to desired color and internal temp of 165 degrees.
