BBQ Rib Sandwich
These barbecue rib sandwiches are amazing! Topped with barbecue sauce, pickles and onions. A mouth watering taste that leaves you wanting more!
- Baby back ribs - 2-3 racks
- Yellow mustard - 1/2 cup
- Camp Chef's Kickin' BBQ Rub or your favorite rub - 1 cup
- Apple juice - 3 cups
- BBQ sauce - 1-2 cups
- White onion, sliced - 1
- Sliced pickle spears
- Footlong hoagie buns, toasted - 3-4
Preheat pellet grill to high smoke.
Remove ribs from package. Use a paper towel and pat the ribs dry. Turn ribs over so bones are facing up and remove the silver skin from the back of the ribs.
Coat the ribs with mustard. You can also use olive oil instead of mustard. This is used as a binder to help keep the rub on the ribs.
Apply a heavy coat of rub to the ribs, covering the whole rack.
Place in pellet grill and smoke for 3 hours.
After 3 hours, wrap each rack in foil. Pour 1 cup of apple juice in each rack and seal tight. Place ribs back in the pellet grill and continue to smoke the ribs for 2-3 hours or until internal temperature reaches 200 degrees F.
Remove ribs from foil and place back on grates of pellet grill.
Pour the drippings from the ribs that are in the foil into a separate container and use the baste the ribs every 1o minutes for about 30 minutes.
Carefully remove ribs from pellet grill meat side down. Remove bones from ribs.
Place rib meat on toasted bun. Top with barbecue sauce, pickle spears, and white onion.
