Red Velvet Pancakes
These chocolately red pancakes are perfect for holiday morning breakfasts or just a fun family treat. Add some cream cheese glaze to bring it all together.
- Pancake mix - 2 cups
- White sugar - 1 T
- Unsweetened baking cocoa powder - 1 T
- Milk - 1 1/2 cups, 1/3 cup
- Red food coloring - 7-10 drops
- Eggs - 2
- Cream cheese - 4 oz
- Butter, softened - 1/4 cup
- Powdered sugar - 2 cups
Set out the cream cheese and butter to bring both to room temperature.
In a medium bowl, mix together your favorite pancake mix, white sugar, cocoa powder, red food coloring, and 1 1/2 cups of milk. Whisk until smooth and blended together. Feel free to add more food coloring to achieve the shade of red you want.
In another bowl, beat cream cheese and softened butter together with the remaining 1/3 cup of milk. After they are creamed together, slowly add in the powdered sugar, mixing as you go. Beat until smooth.
Heat your Flat Top Grill to medium heat. Brush or spray the surface with a little bit of cooking oil. After it has preheated, pour your pancake batter onto the griddle with 1/4 or 1/3 measuring cup. Cook until the batter starts to bubble, then flip to other side.
Scoop the cream cheese glaze into a baggie and snip the corner. Squeeze the topping out of the corner of the bag to drizzle over the pancakes. Enjoy with bacon, eggs, sausage, and any other breakfast items for a fun holiday morning.
