Dutch Oven Beef Ribs
Ingredients

3lbs.Boneless beef ribs.

Bacon, baseball size onion, green pepper.

Mushrooms, one battle of your favorite BBQ

Cooking Instructions

Brown the bacon in the inverted dutch oven lid, to give yourself oil to brown the vegys. Take the bacon out before it is completly cooked, and line the bottom of your dutch oven. Add the beef ribs on top of the bacon in the pot. Turn the ribs to brown all sides.
In the inverted lid, saute the sliced onion, pepper and mushrooms. Keep the vegy slices heafty, as the will wilt from frying.
I like to move the meat to one side of the pot, so I can get the vegys, under the meat, but on top of the bacon. Cover everything with BBQ sauce. Cover with the lid, and add charcol to the top. Cooking time varies, 30 to 45 mins. Make sure to keep the meat covered with BBq sauce.
I like to serve with foil wrapped potatos.Potatos will take longer to cook than the meat, so start potatos first.
