Keg Roaster Chicken

Ahhh, outdoors, grilling and chickens! There's nothing like grilled chicken. And, there are tons of ways to cook these tasty birds. A number of years ago, I heard about "beer can chickens." I didn't really understand what that meant until I saw my buddy Benji stick a beer can in the cavity of a chicken and stand it upright on the grill. I was mesmerized. The chicken was so tender and moist, and the cooking time was rather quick. Thanks for the inspiration Benji.

Beer can chickens have come a long way. And, thanks to Camp Chef, you can astonish anyone with their Keg Roaster. I love this thing. I can cook three whole chickens in about an hour and a half! And it looks very cool. So, grab a beer- or 3- some chickens and let's get grilling!

Jay's Beer Can Hawks

Ingredients

(3)- 4 to 6 lb whole chickens
(3)- 12 oz. CANS domestic beer
(10) cloves fresh garlic, chopped
3 Tbsp Garlic salt
3 Tbsp Lemon pepper
1 Fresh lemon, cut into 8-10 wedges
1 Tbsp each Salt and Pepper
1 bottle Frank's RedHot Chile and Lime Hot Sauce

Prep

Remove innards from chicken and rinse inside and out and pat dry. Discard innards or use them for a gravy or cook them just to snack on. Mmm! Combine garlic salt, lemon pepper, salt, pepper, 8 cloves chopped garlic and mix well. Rub the inside and outside of all 3 chickens with mixture and let sit overnight in a ziplock bag.

Grill

Empty 1/3 of each beer into a cup or mug. (You'll need this to drink after you put the beer cans in the chicken!) Put the remaining chopped garlic in the 3 beer cans. Squeeze 2 lemon wedges in each can and drop the wedge into the can. Place the cans in the Keg Roaster. Position the chickens over each of the cans with the breast of the chickens facing each other. Place the Keg Roaster directly over a burner and place the lid on the Keg Roaster. Make sure that your thermometer is not piercing the chickens. This may take a minute or two of positioning the lid to the Keg Roaster. Turn your grill to high and watch your temp. You want to bring the temp inside the Keg Roaster to just about 300-325. You can adjust the heat by opening the vent on top of the lid and/or controlling the grill temp using the grills control. Either way, your time starts once you start the grill. Cook these babies for about 1-1/2 hours. Check to make sure your chickens are done using a meat thermometer.

Serve it up

I love just quartering my whole chickens and serving them with fresh grilled asparagus and rice. But these are super to shred and serve with warm tortillas and homemade salsa. Be creative and use a variety of canned beverages to enhance the flavor of your chickens. Country Tyme Lemonade and Orange Crush are a couple of my favorites! Enjoy.
