Apple-mustard Pork Chops
4 Bone-in pork loin chops 3/4 inch thick/7oz each
Salt & Pepper
2 Tblspns butter
1/3 Cup apple juice
1 Tbs dried minced onion
1 Tbs dijon mustard
Season pork chops with salt & pepper. In a hot skillet brown chops on each side over medium-high heat in butter.
Stir in apple juice; reduce heat to medium. Cover and cook 5-6 minutes on each side or until juices run clear.
Remove and keep warm. Add onion and mustard to skillet. Cook uncovered, on low for 4-5 minutes or until heated through. Spoon mixture over chops. Serve with rice and garnish with sliced apples.

Oven-Fried Catfish
4 Catfish fillets (6oz each)
1 Cup cornflake crumbs
1 Tsp celery salt
1/2 Tsp onion powder
1/4 Tsp paprika
1/2 Tsp pepper
1 Egg white
2 Tbs milk
Pat fish dry with paper towels. In a shallow bowl, combine the cornflake crumbs, celery salt, onion powder, paprika and pepper. In another bowl beat egg white and milk. Dip fillets into egg white mixture, then coat with crumb mixture.
Bake in well greased baking dish/dutch oven at 350 degrees for 25-30 minutes or until fish flakes easily with fork. |
