  • Get the Most Out of Your Turkey Cannon

With Thanksgiving only a week away (where did November go?), it’s all hands on deck for the big feast. We have all the gear, tips, and tricks you need for a smooth holiday. That means cast iron for your pies and rolls, a pellet grill for smoked turkey and extra oven space, and one of our favorite products, the Turkey Cannon. When our customers see the Turkey Cannon, their first question is invariably: “What is that thing?”

To be fair, you probably haven’t seen many turkeys cooked this way. It’s Thanksgiving’s best kept secret. The concept is simple.

If you’ve ever had Beer Can Chicken, our Turkey Cannon Infusion Roaster works in much the same way. With a liquid of your choice in the center tube, the Cannon roasts turkey from the inside out. This keeps the moisture locked into the meat, and it cuts your cooking time nearly in half compared to the traditional oven method. At last, you could be eating on time on Thanksgiving afternoon.

So if you’re ready to transform your Thanksgiving this year, read on to learn how to use the Turkey Cannon.

    Our Best Tips

    1. Set up the Turkey Cannon inside a roasting pan. The turkey drippings will accumulate here, and you can use them for delicious gravy later on.

    2. Fill the tube with a liquid (and any seasonings) of your choice up to the first hole. Some of our favorites are apple cider, cranberry juice, chicken stock, and cooking wine. The flavor of the liquid doesn’t affect the turkey meat very much—you’ll want to choose your liquid based more on what type of turkey gravy you’ll want (if you’re using the drippings).

    3. Lightly spray the Cannon with cooking oil before placing the turkey. This will prevent bits of food and seasoning from sticking, making your clean-up easier.

    4. Mount a cleaned and prepped turkey onto the center tube. If your bird is 10-18 lbs., place it breast-side up. If it’s any bigger than 18 lbs. (we recommend a maximum size of 20 lbs.), place it breast-side down.

    5. If you cook your turkey breast-side down, remove it from the turkey cannon and roast it breast-side up for the last 20 minutes or so of cooking. This will give you a nice, browned finish on the breast.

    6. Rub the turkey with butter, oil, seasoning, etc. of your choice. Separate the skin slightly from the meat so you can spread some seasoning underneath.

    7. Because of the incredible moisture of cooking with a Turkey Cannon, brining beforehand is optional. Whether you do so or not, your bird will be tender and juicy.

    8. For best results with the Turkey Cannon, you should smoke your turkey in a SmokePro pellet grill. However, the Turkey Cannon also works wonders in your conventional oven.

    9. Find our estimated cooking times here to know how long your turkey will take to cook. Remember to always measure by internal temperature rather than cooking time. The turkey breast should reach 165° F.

    10. As soon as the turkey reaches the desired temperature, remove it from the heat and tent it (cover with foil) for about 20 minutes. You can also place it in a cooler for up to 2 hours. This will keep it warm and will allow the juices to absorb back into the meat.

    Ready for the Holidays

Are you ready to see how this strange kitchen contraption can take your Thanksgiving to the next level? Forget dry, bland turkey that takes all day to cook—get yourself a Turkey Cannon today.

  • 15 Tips for Smoking Turkey Like a Boss

If you’re short on oven space or you’re tired of the same dried-out turkey meat every year, then it’s time to smoke. Turkey, that is. Check out our step-by-step smoked turkey recipe, as well as our favorite smoker and pellet grill for the job. When you’re ready to get cooking, take these pro tips along with you for the best Thanksgiving turkey you’ve ever tasted.

    Smoked Turkey Pro Tips

    1. Cook your turkey by temperature rather than time to avoid undercooking or drying out the meat.

    2. Use a digital wireless thermometer to see when the turkey thigh reaches 175° F and the breast reaches 165° F. Turkey Cannon Infusion Roaster   3. Use our Turkey Cannon Infusion Roaster to cut the cooking time down to a fraction of the normal time.

    4. If your turkey is mounted on the Turkey Cannon, smoke it in a roasting pan to catch the juices for gravy. If you aren’t worried about making gravy later (we don’t judge) you can smoke your bird directly on the grill racks for crispy skin all around.

    5. Choose Apple or Cherry Premium Wood Pellets for a sweet wood-fired flavor; use Hickory for a smokier taste.

    6. Coat the outside of your turkey with Citrus Herb Seasoning for a light, herb-roasted flavor.

    7. Apply the rub or seasoning of your choice underneath the skin so it flavors the meat directly.

    8. Use cooking wine in your Turkey Cannon for extra flavor in your gravy.

    9. Don’t stuff your turkey if you’re smoking it. The heat needs to be able to circulate freely throughout the bird.

    10. If your bird starts to brown more than you like, tent it with foil for the remainder of the cooking time.

    11. Avoid lifting the lid of your pellet grill and smoker to maintain as much heat as possible.

    12. Smoking turkey with a slightly higher temperature (275° F) will make your bird’s skin crispy rather than rubbery.

    13. Your turkey must pass through the critical zone (40°-140° F) in 4 hours or less to be safe to eat.

    14. When you cut into your turkey, the juices should run clear. If they are colored, your turkey isn’t quite done.

    15. Tent the bird with foil or rest it in a cooler after it reaches temperature for about 20 minutes. This will ensure a juicier, more flavorful Thanksgiving turkey.

  • What the Heck is a Stove System?

    More than Just a Stove

For over 25 years, we’ve been designing a better way to cook outdoors. Over all this time, we’ve made a huge variety of outdoor cooking gear. But our staple product from the start has been our propane camp stoves. Obviously, their rugged, durable design has a lot to do with their popularity; other features like powerful burners, removable legs, and matchless ignition have also had a hand in keeping our classic stoves at the top of the industry. However, there is one thing about our stoves that truly steals the show: they aren’t stoves.

Okay, so they are stoves in the literal sense. But they aren’t just stoves. We created the stove system to fulfill all of your outdoor cooking needs. Our armada of accessories alongside each of our stoves makes it so that you can enjoy all your favorite meals outdoors just as easily as you enjoy them indoors—all one cooker. How does that work? Let us explain.

    Choose Your System

More than just a stoveFlat top griddle, BBQ grill box, Artisan outdoor ovenAt Camp Chef, we have two separate cooking systems: 14-inch and 16-inch. You will often see these numbers on our stoves and accessories to show you to which system each product belongs. The measurements refer to the depth of the stove (front to back). Our 14-inch system includes mainly two-burner stoves and accessories with a 14-inch depth; our 16-inch system includes mainly three-burner stoves and accessories with a 16-inch depth. Starting to make sense?

Now, why the different systems? One of our priorities at Camp Chef is offering you a better way to cook where and what you want, for however many people you have in your group. Some outdoor chefs like to keep things simple with two burners and two accessories, or a single large accessory. On the other hand, many others love having a third burner for an extra accessory to open up their cooking options.

    Mix and Match Accessories

After you’ve decided on the size of your system, it’s time to add your choice of stove accessories. To give you the freedom to cook what you want, we offer a variety of accessories, including BBQ boxes, outdoor ovens, griddles, Dutch ovens, skillets, and more.

Our professional grill boxes are awesome for grilling veggies, kabobs, burgers, brats, and more. They feature cast iron grill grates, so you can even sear your meat.

As you might expect, our outdoor ovens are perfect for baking pizza wherever you go. However, you can also bake cookies, brownies, open-faced sandwiches, and even meat.

Our griddles come pre-seasoned, so they’re ready to cook as soon as you are. They are among the most versatile of cooking accessories. You can make bacon, stir fry, eggs, pancakes, burgers, and more all on one surface.

Dutch ovens and skillets—or any of our other cast iron accessories—are the Swiss army knife of your stovetop accessories. They can do so much. Baking, frying, searing…the list goes on. All of our cast iron pieces are pre-seasoned, so there’s no hassle after you take it out of the box.

By mixing and matching all of these products, there is almost no limit to what you can make for breakfast, lunch, or dinner. Seriously. Imagine bacon and eggs in the morning, pizza at lunch, and philly cheese steak sandwiches for dinner—all from a single stove.

That’s what our stove systems are all about.

    Cook What You Want

With so much cooking power and flexibility, you can cook what you love to eat no matter where you are. We’ve compiled a small list of our top recipe picks, all of which you can make using you 14-inch or 16-inch system. If you have other ideas, let us know in the comments.

  • Our Favorite Halloween Bites Roundup

Our favorite part of Halloween is by far the food. What else could you expect from the Camp Chef team? But when it comes to adorable whipped cream ghosts or carefully designed chocolate spiderweb, we like to turn to a few of our friends in the food community. Here we've created a roundup for you of the creepiest, cutest, and most importantly, tastiest Halloween bites we could find. Try these recipes on your pellet grill, in your outdoor oven, or with your cast iron dishes. Camp Chef is ready for your Halloween menu.

    For Dinner

    Dinner in a Pumpkin

This is a fun way to bring pumpkin into your meal in a savory way. If you want to take the meal outside, you can just as easily roast the pumpkin inside your pellet grill set at 350° F.

    Mini Mummy Pizzas

You can't go wrong with cheese and sauce on a pizza crust. Have a make-your-own-mummy night with all the ingredients and bake them in your outdoor pizza oven.

    Meaty Eyeballs & Breadstick Bones

Another perfect recipe for your outdoor oven. It's a spooky combination of meatball eyes and bone breadsticks that your kids will love.

    Shepard's Pie Stuffed Peppers

Half the fun of this recipe is figuring out which face to carve into your jack-o-lantern bell pepper.

    For Dessert:

    Ghost Pretzels

Boo! Try these spooky chocolate pretzels at your Halloween party this year. They're equal parts funny and adorable.

    Pumpkin Cheesecake Mousse Cups

The picture speaks for itself. Light, fluffy, and oh so delicious.

    Spiderweb Cheesecake

Impress your kids with your cake decorating skills with this cheesecake. We swear it tastes better with the webbing design.

Ghosts in the Graveyard Pudding Cups

This recipes is a Halloween twist on a "cup of dirt" dessert. Pudding and cookies make up the base, while the fluffy ghoul is a swirl of whipped cream.

    For Drinks:

    Homemade Root Beer

Not only is this root beer delicious, it also only takes 15 minutes to make. Add some dry ice for a spooky touch.

    Mad Scientist Potions

Dry ice also brings these drinks to life. Really, you can use whatever you like as the beverage (although this recipe calls for Kool-Aid). Just choose some crazy colors and add the dry ice.

    Caramel Apple Spice Cider

This Starbucks copycat recipe is a fall staple. Except now you don't have to go through the drive-thru anytime you want it.

    Candy Corn Punch

If you're not a big fan of candy corn itself, try this punch instead. The ingredients layer to create the candy corn stripes, but the beverage itself tastes fresh and citrusy.

Do you have any other Halloween recipes you love to use? Have you tried one of these before? Let us know in the comments!

  • BTU: What Does It Mean & How Many Do You Need?

What in the World is a BTU?

If you’ve checked out any of our stoves, you’ve probably seen a BTU figure associated with each one. And if you’re here at this article, you probably looked at it and had no clue what it meant. Let us explain it to you.   BTU stands for British Thermal Unit. It is used in North America (not in Europe, despite the name) as a way to measure energy output. A single BTU is equal to the energy released by burning one match. To put things in perspective, your household stove burners are probably around 10,000 BTUs—that’s like burning 10,000 matches at once.

How Many BTUs Do I Need?

For basic outdoor cooking and groups of only a few people, you’ll need a stove that has an output of at least 10,000 BTU per hour. Matching your kitchen stove in power, you’ll be able to cook pretty much anything you’d whip up indoors. This is the minimum amount of heat you should have with your camp stove.

But why settle for the minimum? Most of our stoves feature burners with an output of 30,000 BTU/hr each. That’s 3 times more than your kitchen burners. Our double burner and triple burner stoves with this kind of cooking power are perfect for families and larger groups because you have the heat and surface area you need to cook a ton of food. Pro tip: these burners are also great for home canning.

We also carry a couple of high-output stoves with burners that can pump out 60,000 BTU/hr. That’s a ton of power. In fact, that’s more than you would ever need for basic outdoor cooking. These stoves are best for specialty situations like home brewing, high capacity boiling, and extreme cold temperatures. You should only use heavy duty pots with a 60,000 BTU burner rather than accessories like our grill boxes, griddles, or pizza ovens. The high heat output can warp and burn out some of these more lightweight materials.

Check out our infographic for a quick look at how many BTUs you need for your outdoor adventures.
