At our roast distaster dinner…I wanted rolls, but didn’t want to set dinner back 2 hours, so I found this in my cookbook:
This isn’t a sweet muffin, like we think about today, but more of a biscuit in a muffin form! It was an ok substitution to me, but I was the only one who ate them!? So, if you want a change from your standard dinner roll and/or don’t want to wait for yeast, try this one today!
- 1 3/4 c. flour
- 2 t. baking powder
- 2 T. sugar
- 1/2 t. salt
- 1 egg
- 1 c. sour cream
- 1 T. water
- 1/2 t. soda
- Sift dry ingredients into a large bowl.
- In a small bow, whisk egg very well and add cream, then soda mixed with water and add to the dry ingredients.
- Stir until just combined and no more!
- Scoop into muffin tins and bake at 425 for 15-20 minutes.
Serve with fresh butter.
