Freezer Corn Day!

I have to say…. This is a first for me!

I am definitely still learning about canning and food storage, but as of late I have been trying to work on some of my food storage options (like for example actually having food storage). I love corn on the cob! It is one of the best summer foods, in my opinion.

My parents have done freezer corn and said they would help!

We bought 8 dozen ears of corn and set up shop.

Once I learned the steps and a few tips and tricks it was a simple process!

First boil the corn! I boiled two pots at a time on a two burner stove. It generally only needs to cook for about 5 minutes.

Second, put the corn in ice water. This is a tip the farmer at the local corn stand taught me! Corn continues to cook once it is out of the pot, so by putting the corn in ice water it stops the cooking process. It also makes the corn nice and crisp when it is reheated. Otherwise you mightget mushy kernels!

Third, cut the corn off the cob! I put 4 ears in a bag! We had our Sherpa table right next to the ice water so we didn’t have to go far. I can not say enough good things about this table. It continually comes in handy! It has storage, and a great design so that its easy to travel with. The legs slide in and the top folds up, simple.

Last….. Bag it up, and freeze it!

We ended up with 21 quart size freezer bags. Freezer corn is so easy!
