Banana Perch!!

What is Banana Perch, and who wants to eat it? 

Well it all started out with these guys!

Yep! These bananas have seen better days.  I guess that’s what happens when you go camping and forget to eat them!  In an effort to save the life of the banana I decided to whip up some banana muffins. 

I chose muffins for two reasons.  First its pretty tasty, and Second I had all the stuff to make them at my house.  I make cornbread and other muffins all the time, but this time I decided to make them fun to eat!  After all I was also out of muffin wrappers!

I have this pan…..

The perch pan!  Now there are several tricks to using this awesome pan.  First use ALOT of oil in the bottom of the pan, when you think you have a lot maybe add a dash more.  If you just give it a quick spray with cooking spray you will not enjoy trying to get the fish out.  Second, these muffins don’t tend to raise much so I filled the perch to the brim!

I have been trying several recipes from the Outdoor Cooking Guide.  I chose the Banana Apple Muffins recipe on page 94.  I had to change it a little bit because I also didn’t have any apples.  Here is what I did:

Banana Muffins

Ingredients:

  • 1/2 cup  Butter
  • 3 Eggs
  • 3 very ripe bananas mashed
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 3/4 tsp soda

Directions:

  1. Mix all of the ingredients together and then bake at 350 degrees for about 15 minutes. 

The best part of making these muffins….. I used an OutDoor Camp Oven!

This little wonder has been the best thing to happen to me all SUMMER!  My house is old, and it does not have any type of A/C!  I have been using the oven for almost all my cooking! Its works great and my house stays cool…

There are two burners on top of the oven as well! The oven heats up fast, which is why I didn’t cook the muffins as long.  If you feel like the oven is getting to hot simply just crack the door!

And the final product….

BANANA PERCH ~ They sure are tasty!  I only had one perch pan, and a ton of batter, so I put the rest in my Skookie pans!

These taste great with ice cream and caramel just like the Skookie!
