Apple Aebleskivers

These little round Danish pancake balls are a cross between a pancake and a doughnut. They are very easy to make and delicious. If you don’t want to make this batter recipe try using pancake mix. You will need an aebleskiver pan to make them. We used the our cast iron aebleskiver pan.

Ingredients:

  • 2 apples, peeled and chopped into ½” pieces
  • 2 Tbsp. butter plus extra for aebleskiver cast iron pan
  • 2 tsp cinnamon
  • 2 eggs
  • 1 Tbsp. sugar
  • 2 cups flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 ½ Cups buttermilk

Directions:

1. Lightly Sauté the apples in a skillet with 2 Tbsp. butter and cinnamon until softened. 

2. Separate the eggs and beat the egg whites until stiff peaks form. Mix the egg yolks with the sugar. 

3. Sift the flour, baking powder, and salt together. Gradually stir flour and buttermilk, alternating with each ½ addition, into egg yolk mixture. Gently fold the egg whites into the batter.

4. Place the aebleskiver pan on the burner and turn to medium high to heat it up, place a small amount of butter in each well. When the butter starts to sizzle use a pastry brush to coat the entire surface of each well, then turn the burner down to medium heat.

5. Spoon batter into each well filling it half-way (about 1 tsp.). Place 1 or 2 apple chunks in batter and then cover with batter to the top of the well. Allow cooking until the edges of each aebleskiver begins to brown and pull away from the sides.

6. Lightly run a butter knife or 2 wooden skewer sticks around the edge to loosen and turn ¼ turn. Allow to cook for about 2 minutes and then turn ¼ turn again..

Turn a few more times until it is brown on all sides and the center is cooked.

7. Remove the aebleskivers to a plate and sprinkle with powder sugar or serve with syrup.

NOTE: Although these are most commonly prepared with apples you can substitute just about anything. Try adding chocolate chips, blueberries, jam, or even cheese and herbs for a savory flavor. Recipe based from Scandinavianfood.about.com.
