Cranberry Scones

Cranberry Scones
Ingredients:
2 cups all-purpose flour
1/4 cup sugar, plus additional for sprinkling
1 tablespoon baking powder
1/4 teaspoon salt
1 to 1/2 cups heavy cream, plus additional for brushing tops
1/2 cup dried cranberries
Preheat oven to 325 degrees. Lightly spray your cast iron wedge pan with cooking spray. Set aside. In a mixing bowl, whisk together flour, 1/4 cup sugar, baking powder and salt. With a wooden spoon, mix in enough cream to form a soft dough. Do not over mix. Gently mix in cranberries with your hands. Divide dough evenly between the 8 sections of your cast iron wedge pan. Brush a small amount of cream on top of each scone, sprinkle with additional sugar. Bake 35-40 minutes or until golden brown. Serve warm. Makes 8 scones.
