Lemon-Butter Green Beans with Pine nuts

Ingredients
1/3 pound fresh green beans, ends trimmed, blanched in boiling salted water
1 tablespoon unsalted butter
1 tablespoon minced shallots
1 tablespoon pine nuts
1 teaspoon fresh lemon juice
Pinch salt
Pinch freshly ground black pepper

Sweet Potato Pie
3 cups yams or sweet potatoes, mashed
½ cup sugar
2 eggs, beaten
1 tsp. vanilla
¼ cup melted butter
1 tsp. cinnamon
¼ tsp. ginger

1 cup brown sugar
½ cup flour
½ cup butter

These are two of my favorite Thanksgiving dishes.  Both are simple, and are always a hit at our family Thanksgiving dinners.  Hope you enjoy them.

1 cup miniature marshmallows
1 package pistachio pudding mix (instant)
1 can un-drained crushed pineapple
½ cup chopped pecans

Cheese Scalloped Carrots
12 Carrots (peeled and sliced) 
½ lb sliced sharp cheddar cheese 
1 med. minced onion  
3 c. bread crumbs
2-3 stalks celery, chopped 
4 tablespoons butter
