Pizza Skookie

The Skookie
One of the great aspects of tailgating is learning new techniques and being introduced to cool new cooking toys. When my "Skookie" arrived, I opened the box immediately to satisfy my curiosity. I pulled out 2 "Skookies" and a bag of cookie mix. I followed the easy instructions and in 20 minutes, my family and I were enjoying our first "Skookie."
We cooked our first ones in our RV oven. They came out great. Topped with vanilla ice cream and Toad Sweat desert hot sauce. (Never heard of desert hot sauce? Check back later for more on that.) Yummm! Since our first Skookie experience, I've cooked them on the grill, used them to make individual pizza on the grill and even for crepes and pancakes right over an open flame!
OK, now that I was a little more familiar with the Skookie, I thought I'd try something a bit different- cooking one on a grill! I love a challenge. Of course I scorched the edges on the first one, temp was too high. I use a Big Gas Triple Burner with a double burner grill box. The great thing about this grill is the temperature control you have. I set the temp at just about 325 degrees F. This is the critical step, the grill box thermometer is set on the left side of the grill box. I fired up the OPPOSITE burner and let the temp get to 325. I placed my Skookie on the NON fire side of the grill box. You are going to want to check these a few times throughout the cooking process. Use a toothpick to test the Skookie and keep an eye on the outer edges too. Remember, this is cast iron; once you remove it from the heat, it will continue cooking for a bit.
Note: The outside ambient temp and your propane fill level will make a difference in cooking times. Once you open your grill box, most of your heat will escape. A low propane tank will take longer to heat your box back to cooking temp than a full one will.
Pizza Recipe
This was a very fun family project. We made individual pizzas. Everyone got to choose their own toppings, and it couldn't have been easier. I used ready made store bought ingredients, but you can get as elaborate as you need to. The key here is making sure the temp bakes the crust all the way through.
Ingredients
Pillsbury Pizza Crust (can)
Ragu Pizza Sauce (jar)
Pepperoni (pre-sliced)
Sliced Olives (can)
Shredded Cheese (bag)
Choice of toppings
Heat grill box up to 400 degrees F- use both burners if you are using a double burner box. Use Olive Oil to lightly coat each Skookie. Unroll dough and cut in four equal parts. Place each square over the Skookie and mold the crust to fit inside the edges. Place toppings on and cook for 10-12 minutes. Watch the edges of the crust. You don't want to burn the crust, but you want it nice a crispy. Enjoy!
